Flavor ingredients for the Lemon Blue & Black. Meyer lemons, fresh blueberries and Ribena British blackcurrant juice.

Checking the temperature of the boiling sauce. It needs to reach certain temps to invert the sugar so that we won’t have icy sauce texture when it freezes.

The juice is heated with some sugar creating a lemon syrup.

The rind is added to the cream as it cooks to catch the flavor. When the syrup is mixed into the cream the rinds will be strained out.20130826-232518.jpg
