Peach Lambic Sorbet

Blanched and the skins are coming off super easy.

Puree, Puree, Puree – the most important part of the sorbet process. Next we heat it and add sugar and syrup.20130810-144240.jpg

After the sorbet has chilled for a few hours we add cold lambic beer. This one has a peach flavor. Then it gets a spin. Sorbet spins until it is about the consistency of a slurpee. You don’t want too much air. Then it’s into the container for a hard freeze.
